I am traveling to Laos from Hong Kong via plane with a 2 hour stopover in Hanoi. If there is an issue and we were to miss our connecting flight in Hanoi. Would it be possible to obtain a short term visa to stay in Hanoi overnight and take the next day flight to Laos?

If you just transit in Vietnam airports without going out, you do not need a visa. Yet, if you go out, even 1 days, you are required to have a Vietnam visa.
